Straight from the Tin

Ingredients

• 1 tin Arne’s Reserve caviar, well chilled
• A bowl of crushed ice
• 1 mother-of-pearl spoon (never metal)
• Chilled Champagne or iced vodka, to serve

Method

1. Keep the tin refrigerated until the moment you serve — caviar is at its best just above freezing.
2. Nestle the unopened tin into a bowl of crushed ice for a few minutes to settle.
3. Open the tin at the table and serve straight from it with a mother-of-pearl spoon; metal dulls the flavour.
4. Taste a small spoonful on its own first, then pour something cold and dry alongside.
